Finish your Valentine’s Meal in style with this tasty tiramisu, just like Nonna used to make.
Tiramisu has been on Nonna’s menu from the start and is one of the most frequently requested recipes by customers – though they have kept it a secret until now!
For the base:
18 savoiardi biscuits
150ml strong espresso
For the mascarpone cream:
3 large free-range eggs (separate eggs from yolks)
5 tbsp sugar
100ml whipping cream
Cocoa for dusting
Place the 3 egg yolks in a large bowl with the sugar and whisk until very pale.
Add the mascarpone and the cream to the bowl and beat until thickened.
In a separate bowl, whisk 2 egg whites until peaks are formed.
Slowly add the whisked egg whites to the mascarpone cream, folding gently, mixing well but lightly.
The cream should be soft and airy.
Now mix the marsala and the espresso – dip each side of the savoiardi biscuits one by one in the marsala/espresso, still keeping the savoiardi firm.
To assemble, layer the biscuits in a glass, then add cream, followed by another biscuit until full, finish with a layer of cream.
Sprinkle cocoa powder on top to finish.
